I don’t know about you, but I am tired of cooking! Typically, cooking is a spiritual and practical lifestyle that I indulge in. But boy am I tired of dishes and figuring out what to eat! To combat this frustration, I am preparing my freezer for meals that I can eat whenever I am in a mood. Prepping freezer-friendly meals makes it easier to choose a home-cooked meal that will benefit my wallet and my health.

I have found that frozen meals allow a bit of multitasking that I can’t usually find while cooking. I’m able to pop a frozen meal into the oven and continue with any chores or work that I need to do. Serving size packed meals are perfect for a rainy day or as a care package to a college student. Here are 5 easy freezer-friendly meals that you can make today and eat tomorrow:

1. Individually Packed Lasagna 

Vegan Version: Follow the same way to portion out the lasagna into individual, but instead of meat add lentils, mushrooms, eggplant, and zucchini. For the cheese, you can use your favorite ricotta substitute, nutritional yeast, or go cheese-less.

2. Chili

Batching in Advance

Your future self will thank you for making a batch of these essentials in advance. All you will have to do is take the portion you need out of the freezer and let it defrost.

  • Rice or any grain
  • Beans: If they were cooked from dried.
  • Non-seasoned Meat: You can add the seasonings when you defrost it. No seasoning gives you more wiggle room. Need it for spaghetti, well you’re not married to a taco seasoned beef in the freezer.
  • Sauce: Try this with your favorite sauces in an icecube tray! For example, I like to freeze pesto because it can e used for sauces, filling, and dressing.
